Rockhaggis oatcake biscuits

I was in my local co-op the other day and noticed a packet of oatmeal in the cheap rack.
Had a brain wave to make Traditional Scottish Oatcakes - back home got on the Internet and looked up recipes ....... uggghhhh so boring !!!
So I beefed mine up.
- Oatmeal
- Maize flour
- Salt
- Baking powder
- Butter
- Machine chopped Exotic Fruit & nuts selection
- Honey
- Sesame seeds.
OMG .... where's my big white cheffy hat thing ... They were very goooooood!
How:
3-4 ( maybe more ) cups of oatmeal - 1 cup maize flour - 1-2 tea spoon of salt same with Baking Powder. A Goodly handful of butter (olivio) and likewise of chopped fruit. 3-4 generous dollops of honey and a small handfull of seeds.
Mix and add warm water to end up with a tarmac consistancy, just dryer than sticky.... roll hadfulls of it into 1/4 inch (max) thick cow pats, use whisky glass to cut shapes - lay on wire tray - stick in oven 180 ( medium kind of heat) --- keep an eye on them - take out when edges JUST turn from golden brown to dark brown - do not go to black.... thats bad!!!
Rest till cool - nibble neat or with more butter and spread of choice.... lemon curd or apricot jam are my fav's..... Enjoy.
